Roast Pig Stew (Lechon Paksiw)
Whole roast pig known as lechon, is part of the Philippine cuisine history. Mainly on big occasions like birthdays, weddings, fiesta or new year, Filipinos prepare lechon. Sometimes having a whole roasted pig, you can't avoid to have left over. One way to turn the left over into another delicious dish is to make it paksiw. Try the sweetness of my easy roast pig stew or lechon paksiw.
INGREDIENTS:
1 lb left over lechon chop
2 Tbsp. oil
5 cloves crushed garlic
1 medium red onion sliced
1/2 c white vinegar
2 c water
10 oz bottled sauce for roast
1/2 cup brown sugar
2 Tbsp. soy sauce
4 pieces bay leaf
pepper corn
dash of dried oregano
PREPARATION:
1. In a sauce pan heat oil and saute the garlic and onion.
2. Add in the lechon, water, soy sauce, bay leaf,pepper corn, sauce for roast and sugar. Let it to boil.
3. When boiling add the vinegar, simmer for 10 minutes or when the sauce get thicken.
4. Dash it with dried oregano.
4. Serve with plain rice.
TIPS:
You can make your own sauce out of chicken liver.
